I see these pop up on food blogs here and there, and they look so adorable and tasty! I finally got around to trying it.
There's nothing too fancy about these hasselback potatoes- they are just baked potatoes fanned out by slicing it about 3/4 of the way through. I was hoping that the areas exposed by the slits would help the center crisp up a little more than it did- it was really just like a fancy-looking baked potato.
Slice up a potato, stick some garlic in somewhere, drizzle with olive oil. Bake about an hour at 400ºf. I topped these with caramelized shallots and some grated gruyere, which was- uh, REALLY GOOD, duh.
