Regular readers might be aware that Summer and I get together Wednesday nights for a shared vice. We sip tea, nibble snacks (usually leftovers from whatever we baked recently) and heckle Tyra Banks. But last night happened to ALSO be the season premiere of Top Chef- a cooking competition show that I've never seen before. Duh! Of course I stayed to watch- I don't have Bravo at home.
To celebrate both the premiere and our sheer dorkiness, Summer quickly dug up this recipe using the Top Chef website. I guess it's a Campell's recipe but we decided it was in the spirit of things, and she happened to have enough ingredients around to throw it together.
Just lay out a sheet of puff pastry, brush with egg wash, and layer on well-drained (like, wrung-out. as dry as you can get it.) cooked spinach (we used frozen), and a mixture of grated cheese (romano? parmesan? gruyere? whatever you want), chopped onions, and a sprinkle of garlic powder. Roll up like a jelly roll, cut into slices, and brush the puff pastry with egg wash again. Bake on a sheet of parchment paper until puffy and golden, about 15 minutes at 400ºf.
